These diced dates are macerated, coated with gluten-free organic oat flour (reduces stickiness and improve measurement accuracy), and then run through a dicer machine.
Because of their low moisture and low water activity, diced dates have a long shelf life (1-2 mo on the shelf, 6mo-1yr in the fridge & a few years in the freezer--mine have never lasted longer than that so I'm not sure exactly how long!)
