This olive oil is the BEST--you'll never go back! It has an amazing taste, is extra virgin, cold-pressed & straight from Italy--so fresh!

Our extra virgin olive oil is the finest you can buy. The olive oil is imported, Mediterranean, extra-virgin, cold-pressed, first press olive oil from Greece, Spain, or Italy, and pressed in Italy. It comes in a decorative metal tin with a closeable spout. The oil comes in cases of six gallons per case, but you can order in any quantity you would like - by the gallon or by the case.

We bottle the oil in non-reactive metal tins (rather than plastic or glass) to keep out the light, which improves the shelf life. The recommended shelf life is 2 years. However, Alton Brown on the Food Network says that if olive oil is away from light, heat and air, it should last indefinitely. A member of our group opened her oil after over 8 years, and reported that it was in perfect condition. We opened some that was four years old and had stored unopened in our basement, and it was fabulous. Once we open our tins, we try to use them within 12 months.

We use this oil for everything except cookies, pie crusts, and deep-frying. We use it in bread, cakes, dressings, sautéing, and shallow frying (up to an inch). You can also drizzle it over slices of crusty bread or onto open-face sandwiches. Use it on a baked potato or add it to mashed potatoes instead of butter. Extra virgin olive oil tastes great on cooked vegetables or brushed onto fish or meat before serving. For deeper frying, we use other oils with a higher smoke point.

All olive oils are graded in accordance with the degree of acidity they contain. We are importing the highest-quality oil, which is cold-pressed, a chemical-free process that involves only pressure, which produces a natural level of low acidity. Extra virgin olive oil, the cold-pressed result of the first pressing of the olives, is only 1 percent acid. It's considered the finest and fruitiest of the olive oils and is therefore also the most expensive. That is why I LOVE this oil. The flavor, color and fragrance of olive oils in general can vary dramatically depending on distinctions such as growing region and the crop's condition. Extra virgin olive oil can range from a crystalline champagne color to greenish-golden to bright green. In general, the deeper the color, the more intense the olive flavor. The oil we get tends to be on the greenish-golden colored side, which is wonderful for several reasons. First, the flavor of the oil isn’t as strong as some of the dark green olive oils, which makes it ideal for general use in cooking and baking, but it is flavorful enough to make wonderful dressings. Second, the health benefits and quality of the lighter cold-pressed oil are as great as the very dark oils. Third, the price is fabulous."
